Chicken and Rice On The Go



Ingredients:
1 chicken breast (cooked and shredded) 

1 large carrot 
3 onion stalks 

3 eggs 

3 cups of cooked rice 

1/2 tbsp olive oil 

1 1/3 cups Mozarella cheese (grated)











Directions: 
1. Preheat oven to 350
2. Shred cooked chicken 
3. Grate carrot
4. Finely slice onions
5. Lightly beat eggs
6. In a large bowl, add cooked rice, chicken, carrot, onions, eggs and about 3/4 of the cheese and mix well. 
7. Fill muffin cups and top with remaining cheese.
8. Bake for 15-20 minutes until golden brown!
